ISO food diary – Burrito plate

This meal is a common go to meal for my lunches. Make the bean mix and coleslaw on the weekend so they are ready to go in the fridge. That way, when it comes to lunch time it’s super quick and easy to serve up! 

Recipe: 

  • 1 x serve of mexican beans
  • 1 x wholemeal pita wrap
  • 1 x serve of coleslaw 
  • 1 x serve of siracha mayo (YUMMM) 
  • 1/4 of a green capsicum 
  • 1 cup of spinach
Heat the Mexican style beans up, on a plate (microwave will do), put the other ingredients around the outside and Bob is your uncle! 

Recipe for mexican style beans:

  • 2 x tins of three bean mix (no added salt – woolworths)
  • 1 x tin of tomatos
  • 1/4 packet of mexican seasoning
  • 1 teaspoon of turmuric
  • 1 teaspoon of mexican chilli powder
  • 1 teaspoon of sweet paprika 
Makes 4-5 serves

Recipe for coleslaw: 

  • 1/2 a red cabbage 
  • 2 x large carrots
  • 2-3 lengths of spring onion 
Makes 4-5 serves
